- ½ tsp baking soda
- 1 tsp cinnamon
- ¼ tsp salt
- ½ cup butter softened
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 ripe banana mashed
- 2 large eggs
- 1 tsp vanilla extract
Preheat your oven to 350°F and line your baking sheet with parchment paper for easy cleanup.
Mix the softened butter, brown sugar, and granulated sugar until light and fluffy in a large bowl.
Add in the vanilla, mashed banana, and eggs (one at a time), mixing well.
In a separate bowl, combine the flour, baking soda, cinnamon, and salt.
Add to the wet ingredients and mix until just combined. Stir in the chocolate chips (saving a few to add to the tops of the cookies before baking).
Chill in the refrigerator for 20-30 minutes, as the dough will be sticky.
Once the dough has chilled, using a cookie scooper, drop the cookie dough 2 inches apart onto the prepared cookie sheet. (Add your additional chocolate chips on the top if desired.)
Bake for 10-12 minutes or until the edges are set.
Cool for 5 minutes before moving the cookies from the cookie sheet to a wire baking rack.
