Ingredients

  • 6 cups crispy rice cereal
  • 4 tbsp butter
  • 10 oz mini marshmallows
  • 1 tsp vanilla extract
  • cups white chocolate chips
  • black decorating or writing gel for eyes and mouth

Instructions

  • Start by melting the butter and marshmallows over low heat, stirring occasionally until completely melted and smooth.
  • Remove from heat and stir in the vanilla extract.
  • Add the crispy rice cereal and stir until everything is well coated.
  • Press into a greased 9x13-inch pan. Allow them to cool and harden (about 1 hour).
  • Once they have cooled, remove from the pan, and using a sharp knife cut the treats into triangles (similar to how you cut Christmas-tree shaped brownies). Cut the triangles in alternating directions to get the most treats. Then press down on the tops just a little so they are more rounded.
  • Place the white chocolate in a microwave-safe bowl. Microwave for 30 seconds and stir well, Microwave for another 15-30 seconds or until the chocolate is melted and smooth.
  • Dip the rounded top of the Rice Krispie treat into the melted white chocolate and place on parchment paper to set.
  • When the chocolate has hardened, use black decorating gel to add two eyes and a mouth to each ghost.

Notes

Helpful Tips

  • Lightly grease your hands or a spatula when pressing the Rice Krispie mixture into the pan to prevent sticking.
  • Make sure the Rice Krispie treats have set completely before cutting them into the triangle (ghost) shapes.
  • If the white chocolate becomes to thick while you are dipping, you can put it back into the microwave for a few seconds.
  • Make sure the white chocolate has set before adding your decorating gel..

Variations

  • Add some Halloween sprinkles before the white chocolate has set.
  • You can use white candy melts in place of the white chocolate chips if you'd prefer.
  • Give each ghost a different expression.
  • If you don't want to dip them, you can also drizzle the white chocolate over the top of the Rice Krispie treats.

Storage

  • Store in an airtight container at room temperature for 3 days. You can place them between layers of parchment paper to prevent the ghosts from sticking together.
