- 14 ounces Nacho cheese tortilla chips party-size
- 2 cups Shredded chicken
- 1 cup BBQ sauce plus more for drizzling
- 1 cup Medium cheddar cheese
- 1 cup Pepper-jack cheese
- ½ Red onion chopped
- ½ cup Black beans

Preheat your oven to 350°F and line a baking sheet with parchment paper (for easier clean-up)
Shred your chicken and combine it with your favorite BBQ sauce.
Spread your nachos evenly on a baking sheet and then add your shredded BBQ chicken over the top, along with your black beans and chopped red onions (you can also add any additional toppings you would like).
Sprinkle the cheddar and pepper jack over the top.
Bake for 10-12 minutes or until cheese is melted and bubbly
Drizzle with extra BBQ sauce and some sour cream (if desired).
Variations
- Switch out the cheese- Try using different types of cheese like Colby-Jack, Monterey-Jack, or Gouda. Preferably, the bricks of cheese work best because they melt better, but if you are short on time, you can always use the shredded packaged cheese.
- Try using rotisserie chicken or leftover grilled chicken. Whatever you have on hand will work as long as it can be shredded or cut into small pieces.
- Add extra toppings- Since we have picky eaters in our home, we keep recipes pretty simple, but you can customize these BBQ chicken nachos by adding some pickled jalapenos, black olives, tomatoes, or corn.
