Shortcut Chicken Stir Fry
This easy stir-fry chicken recipe is made with frozen veggies, precooked chicken, and rice for a simple shortcut meal that's budget-friendly and kid-approved, that you can have on the table in just 20 minutes.

- 2 cups cooked rice
- 2 cups frozen stir fry vegetables
- 1 bag frozen grilled chicken
- 1 tbsp avocado oil
- 1 tbsp butter
- 2 tbsp soy sauce
- 1-2 tbsp McCormick Grill Mate Smash Seasoning
Cook your rice according to package instructions.
Heat the oil in a skillet over medium-high heat, then add the frozen pre-cooked grilled chicken strips and cook, stirring occasionally, until heated through and browned.
Once the chicken is warmed, add the frozen stir-fry veggies, and cook for 5-10 minutes until veggies are tender.
Add the butter and let it melt into the chicken and veggies, then add the rice, and sprinkle the smash seasoning and soy sauce.
Mix everything and continue cooking for 3-4 minutes so the flavors blend together. You can adjust the seasoning to your liking if you feel it needs a little more flavor, and enjoy!
Variations:
- Add a couple of eggs to your skillet, scramble, and then mix everything together for an easy chicken fried rice.
- Add some red pepper flakes or sriracha sauce for some spice.
- You can use rotisserie chicken in place of the grilled chicken. Or try it with steak or pork instead of chicken.
- Serve with noodles or ramen instead of the rice.
- If you want a healthier version of this recipe, use brown rice or cauliflower rice for a lighter option.
Storage
- Store your leftovers in an airtight container in the fridge for 3-4 days. To reheat- microwave or heat in a skillet over medium heat with a little bit more soy sauce.
