Make dinner quick and easy with these shortcut sweet and sour meatballs. Frozen meatballs are cooked in a homemade sauce and served over rice for a simple weeknight family dinner idea everyone will love.
20ounce-canpineapple chunksin juice, drained (reserve the juice)
1½cupssugar
⅓cupvinegar
⅓cupWorcestershire sauce
⅓cupketchup
2tbspall-purpose flour
¼cupwater
2-3cupscooked rice
Instructions
In a saucepan, combine your ketchup, sugar, vinegar, Worcestershire sauce, and reserved pineapple juice (from the can of pineapples). Stir until smooth. Cook on medium heat until it comes to a boil.
Add your chopped colored pepper (your choice), frozen meatballs, and pineapple chunks.
Turn the heat to medium-low and simmer for 15-20 minutes or until the peppers are tender and the meatballs are warmed through. Stirring occasionally to prevent the meatballs from sticking.
Lastly, thicken the sauce by adding the flour (or cornstarch) and water to make a slurry, then slowly add it to the sweet and sour meatballs (stirring constantly) and cook for another 2-3 minutes.
Spoon over cooked rice and enjoy!
