Breakfast Bowl with Frozen Diced Potatoes
This easy breakfast bowl is made with frozen diced potatoes, eggs, sausage, and cheese for a budget-friendly, customizable breakfast that is perfect to make ahead of time to enjoy all week.

- 28-32 oz bag frozen diced potatoes with onions and peppers (optional)
- 8 large eggs
- ¼ cup milk
- 1 pound ground breakfast sausage or 10-15 links
- 1½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese optional
- salt and pepper to taste
Cook your frozen diced potatoes in an air fryer or oven according to the package directions.
Whisk the eggs, add milk, and season with salt and pepper. Then cook in a skillet or in the microwave (stirring every 30-45 seconds).
While the eggs are cooking, heat the frozen sausage links or ground sausage in a skillet until browned and cooked through. (If using the sausage links, cut them into small pieces.)
Once the potatoes, eggs, and sausage are cooked, it's time to assemble the breakfast bowls.
Layer the crispy potatoes at the bottom of the bowl. Add the scrambled eggs, and top with the sausage, then sprinkle with the cheddar cheese and mozzarella (optional).
Lastly, microwave for 30-45 seconds or until cheese has melted.
Serve with some salsa or hot sauce.
