Made with frozen diced potatoes with onions and peppers, sausage, eggs, and cheese melted over the top, it’s a satisfying breakfast that’s ideal for meal prep for the week or a cozy weekend breakfast.

Ingredients for Quick & Hearty Breakfast Bowl

This simple breakfast bowl with frozen diced potatoes, eggs, sausage, and gooey cheese is perfect for busy mornings, as it can be ready in minutes for a hearty breakfast your whole family will love (even picky eaters!)

You will need:

  • eggs
  • milk
  • frozen diced potatoes with onions and peppers
  • frozen breakfast sausage or ground sausage
  • shredded cheddar cheese
  • shredded mozzarella (optional)
  • salt and pepper
  • salsa or hot sauce (optional)

How to Make This Easy Breakfast Bowl

  1. Cook your frozen diced potatoes in an air fryer or oven according to the package directions.
  2. Whisk the eggs, add milk, and season with salt and pepper. Then cook in a skillet or in the microwave (stirring every 30-45 seconds). 
  3. While the eggs are cooking, heat the frozen sausage or ground sausage in a skillet until browned and cooked through. (If using the links, cut them into small pieces)
  4. Once the potatoes, eggs, and sausage are cooked, it’s time to assemble the breakfast bowls.
  5. Layer the crispy potatoes at the bottom of the bowl.
  6. Add the scrambled eggs, and top with the ground sausage or chopped links, then sprinkle with the cheddar cheese and mozzarella cheese (optional).
  7. Lastly, microwave for 30-45 seconds or until cheese has melted. 
  8. Serve with some salsa or hot sauce.

Variations:

  • Add more veggies to the breakfast bowl, like spinach, mushrooms, zucchini, or cherry tomatoes.
  • Try it with different kinds of cheese or add bacon or ham instead of sausage. 
  • Make a high-protein version by adding extra eggs with cottage cheese.
