Cheesy Everything Bagel Breakfast Sandwich

This everything bagel sandwich is perfect for breakfast on busy mornings. Made with a folded egg, ham, and melted cheese, it's a quick, tasty, and portable option to meal prep for the week.

Ingredients
  

  • 1 regular everything bagel sliced
  • 1 large egg
  • 1 tbsp milk
  • ½ tsp everything bagel seasoning
  • black pepper to taste
  • 1 slice cheddar cheese
  • 1 slice Swiss cheese
  • 1 slice ham
  • 1 tsp butter

Instructions
 

  • Slice the everything bagel and toast until golden brown, butter, and set aside.
  • In a small bowl, whisk the egg and a splash of milk until slightly frothy, then sprinkle your everything bagel seasoning and black pepper.
  • Melt butter over medium-low heat in a small skillet, and pour in the egg mixture. Let it cook (don't scramble) until it's mostly set. It will still be slightly soft on top.
  • Add your cheddar cheese slice to the center, and make a folded egg by carefully folding the egg over the cheese on all sides to create a square.
  • Place a slice of ham on top of your folded egg and add a slice of Swiss cheese. Add 1-2 drops of water next to the egg, ham, and cheese, and cover with a lid for about 30 seconds. (This will create steam, which will melt the cheese faster without overcooking the egg).
  • Then, just transfer your egg to the bottom half of the toasted bagel, top with the other half, and enjoy!

Notes

Variations:

  • Swap out the ham with bacon, turkey bacon, or sausage patties.
  • If you want your breakfast sandwich to have a little more spice, add some pepper jack cheese.
  • Don't like Swiss cheese? Add some mozzarella to the top. Prefer less cheese? Only use one slice of cheese in the middle of the egg or on top of the ham.
  • Add some sliced avocado, tomato slices on top, or try adding sautéed mushrooms, onions, peppers, and spinach to your egg mixture.
  • We like to keep things pretty simple with picky eaters in our home, but you can add a spread to your bagel, such as a flavored cream cheese spread, or add some hot sauce or Dijon mustard for some spice.
  • You also don't have to use the folded egg method; a fried egg will work for this breakfast sandwich and be just as delicious.

Helpful Tips

  • When making your folded egg, cook it over medium-low heat to avoid overcooking.
  • Add 1-2 drops of water to your skillet next to your egg, cheese, and ham, and cover for a quick cheese melt.
  • Since the everything bagel seasoning has salt in it, no extra salt is needed with the black pepper.

Storage:

  • If meal prepping for the week, wrap your sandwiches in aluminum foil or parchment paper and store them in the fridge for 3-4 days.  You can also freeze these bagel sandwiches by wrapping them in aluminum foil or placing them in a freezer bag. Freeze for up to a month.
  • To reheat from the fridge, microwave for 30-60 seconds, or 1-2 minutes from the freezer. Be careful not to heat for too long, as the bagel can become chewy.
