Ingredients
  

  • ½ cup butter softened
  • 1 cup light brown sugar
  • 1 large egg
  • tsp vanilla extract
  • ½ cup unsweetened cocoa powder
  • cup all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ cup granulated sugar for rolling
  • 20-24 Hershey's chocolate kisses unwrapped and chilled

Instructions
 

  • Preheat your oven to 350°F, then line a baking sheet with parchment paper.
  • Unwrap your chocolate kisses and place them in the freezer to chill.
  • In a large bowl, mix the butter (softened) and brown sugar. Then, add the egg and vanilla and mix until creamy.
  • In a separate bowl, whisk the flour, cocoa powder, baking soda, and salt. Add to the wet ingredients, stirring until just combined.
  • Chill your dough for 20-30 minutes or until it's easier to scoop out and roll into a ball.
  • Roll into 1-inch balls, then dip into the granulated sugar to coat.
  • Bake for 10-12 minutes or until the edges look set and slightly cracked.
  • After removing them from the oven, gently press the chocolate kiss in the middle of the cookie.
  • Let the cookies cool on the baking sheet until the Hershey kisses are set, and enjoy!

Notes

Variations:

  • Switch up the Hershey Kisses for different flavor blossom cookies.
  • Add Reese's trees and holiday sprinkles for a festive treat.
  • Substitute the white granulated sugar for powdered sugar so it looks like a crinkle cookie.

Helpful Tips:

  • The dough is sticky, so you will have to chill it in the fridge, or you can put it in the freezer if you are short on time.
  • Make sure to freeze the Hershey kisses so they don't melt on the warm cookie.
  • Don't overbake, as you want the cookies to be slightly cracked on top so you can easily press the chocolate kiss on top. The cookies will firm up as they cool.
  • Let them cool completely on a baking sheet for a few minutes so the Hershey kisses can harden.
