Easy Buffalo Chicken Pizza

Ingredients
  

  • 3 cups shredded cooked chicken
  • ½ cup hot sauce Frank's
  • ¼ cup ranch dressing
  • 2 prepared pizza crusts (or 4 packages of pizza crust mix, prepared according to directions on the package.)
  • 3 cups shredded mozzarella cheese divided among pizzas
  • 1 cup grated or shredded parmesan cheese divided among pizzas

Buffalo sauce

  • ¼ cup hot sauce Frank's
  • cup ranch dressing

Instructions
 

  • Start by preheating your oven to 450°, then grease two large pizza pans.
  • Prepare your dough; if you are using the pizza crust mix, otherwise divide your prepared pizza dough and spread it on your pizza pans.
  • In a small bowl, make the buffalo sauce by mixing ¼ cup of hot sauce and ⅓ cup of ranch dressing together and then spreading it evenly over both pizza crusts. (It will be a thin layer, as you don't want the pizza to be soggy, and it gives it a little extra spice.)
  • Add your cooked, shredded chicken to a medium bowl and combine with ½ cup hot sauce and ¼ cup of ranch dressing. Mix, making sure all the chicken is coated with the sauce.
  • Spread your sauced, shredded chicken evenly among both pizzas. Then, top with the mozzarella cheese and parmesan cheese.
  • Bake for 12-13 minutes until cheese is melted and crust is golden brown. (Since ovens can vary, start checking at 10 minutes.)
  • Remove from oven and let cool for 3 minutes.

Notes

  • This recipe yields 2 large pizzas 
  • You can customize this pizza by adding more ingredients like onions, tomato, or peppers. You can also replace a cup of mozzarella with a cup of cheddar cheese. 
  • If you want your pizza to have more (or less spice), you can add more (or less) hot sauce. I will usually try it before spreading it on the pizza crusts just to make sure it's not too spicy for my family.
  • You can use rotisserie chicken in place of the cooked, shredded chicken if you don't have any on hand.
  • Keep in mind ovens vary, so you may have to adjust the baking time. I usually bake both pizzas at the same time (one on the middle rack and one on the bottom). After 10 minutes, I switch the pizzas so they both get golden brown on the bottom.
  • The pizzas will last 3-4 days in the refrigerator.
