Kielbasa with Peppers and Onions Over Noodles

- 1 tbsp olive oil
- 4 medium multi-color bell peppers sliced
- 1 medium onion sliced
- 1 12 ounce kielbasa smoked sausage sliced and quartered
- ½ tsp garlic powder
- salt and pepper to taste
Buttered Garlic Noodles
- 1 16 ounce egg noodles wide
- 3 tbsp butter
- 1 tsp garlic powder
- ¼ cup parmesan cheese grated
- salt and pepper to taste
Heat olive oil in a skillet over medium-high heat.
Add your sliced multi-color bell peppers and onion to the skillet. Sprinkle with garlic powder, salt, and pepper, then cook until crisp and tender.
While peppers and onions are cooking, boil your egg noodles according to directions on package.
Add the kielbasa to the skillet with the peppers and onions and cook for 3-4 minutes or until warmed through. *see notes
Drain your egg noodles and add them back to the pot. Add 3 tablespoons of butter and stir to melt.
Sprinkle egg noodles with garlic powder, parmesan cheese, and salt and pepper to taste, then stir in to combine flavors.
Serve kielbasa, peppers, and onions over buttered garlic noodles, and enjoy!
*After the kielbasa is warmed through, turn it down to low heat otherwise the peppers and onions will overcook.
If you prefer your kielbasa to be more charred, you can cook it first and then add the peppers and onions.
Also, keep in mind this recipe is for pre-cooked smoked sausage. If you decide to use Italian sausage or any other type of uncooked sausage it will take longer to cook so it should be browned before adding the vegetables.
