Rotisserie Chicken and Stuffing Casserole

This delicious casserole combines tender rotisserie chicken, stuffing, and cheesy broccoli for an easy weeknight family dinner.

Ingredients
  

  • 2 boxes (6oz.) chicken stuffing mix
  • 1 package (8-ounce) medium cheddar cheese
  • 1 10.75 ounce cream of chicken soup
  • ¼ cup sour cream
  • 2 cups rotisserie chicken shredded
  • 1 bag broccoli frozen

Instructions
 

  • Preheat oven to 350° and grease a 9x13-inch baking pan.
  • Prepare the stuffing as directed on the box
  • Cook frozen broccoli in the microwave per the directions on the package.
  • Combine the sour cream, and cream of chicken soup with the shredded rotisserie chicken, and spread in the baking pan.
  • Add half of the cheddar cheese, cooked stuffing, and broccoli to the shredded chicken mixture. Combine and then sprinkle with the remaining shredded cheddar cheese.
  • Bake for 20 minutes or until cheese is melted.

Notes

I don't use any additional spices because it's very flavorful on its own. If you want to cut down on the amount of sodium, you can get a lower-sodium cream of chicken soup.
If you want your stuffing to be crispier, then you can let it bake for an extra 5-10 minutes.
