If my youngest son could have any dinner on repeat, it would be this easy rotisserie chicken and stuffing casserole. He loves it because it has all his favorite flavors (especially broccoli and cheddar), and I love it because it’s the perfect quick meal to make on busy weeknights.

Plus, it’s a budget-friendly recipe that’s easy to prep, made with simple ingredients, and can be enjoyed anytime of the year. Whether you need a cozy dinner on a cold winter day or a chilly spring or fall night, this savory casserole is sure to please everyone (I know my family gives it two thumbs up).

How to Make Rotisserie Chicken and Stuffing Casserole

Ingredients for Rotisserie Chicken and Stuffing Casserole

This quick, no-fuss rotisserie chicken and stuffing casserole only requires a few simple fridge and pantry staples with minimal prep. 

You will need:

  • cream of chicken soup
  • sour cream
  • chicken flavored stuffing mix
  • frozen broccoli
  • shredded rotisserie chicken
  • medium cheddar cheese

Start out by preheating your oven to 350°. Then, prepare your chicken stuffing as directed on the box and cook the bag of frozen broccoli on the stovetop or in the microwave.

While the stuffing and broccoli are cooking, shred your rotisserie chicken and add it to a greased 9×13-inch baking dish. Combine the shredded chicken with cream of chicken soup, sour cream, and cheddar cheese.

When the stuffing and broccoli are cooked, combine them with the shredded chicken mixture in the baking pan. Sprinkle with more cheddar cheese and bake for 20-25 minutes.

  • 9x13 inch Baking Pan

Ingredients
  

  • 2 boxes (6oz.) chicken stuffing mix
  • 1 package (8-ounce) medium cheddar cheese
  • 1 10.75 ounce cream of chicken soup
  • ¼ cup sour cream
  • 2 cups rotisserie chicken shredded
  • 1 bag broccoli frozen

Instructions
 

  • Preheat oven to 350° and grease a 9x13-inch baking pan.
  • Prepare the stuffing as directed on the box
  • Cook frozen broccoli in the microwave per the directions on the package.
  • Combine the sour cream, and cream of chicken soup with the shredded rotisserie chicken, and spread in the baking pan.
  • Add half of the cheddar cheese, cooked stuffing, and broccoli to the shredded chicken mixture. Combine and then sprinkle with the remaining shredded cheddar cheese.
  • Bake for 20 minutes or until cheese is melted.

Notes

I don't use any additional spices because it's very flavorful on its own. If you want to cut down on the amount of sodium, you can get a lower-sodium cream of chicken soup.
If you want your stuffing to be crispier, then you can let it bake for an extra 5-10 minutes.
