- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp cinnamon
- ½ cup butter melted
- 1¼ cup brown sugar
- 2 large eggs
- 1½ tsp vanilla
- 3 frozen bananas thawed and mashed
Preheat the oven to 350°. Grease 8x4-inch loaf pan.
Combine the flour, salt, baking soda, and ground cinnamon in a medium bowl and set aside.
Mix the butter, sugar, vanilla, and beaten eggs together in a large bowl until combined. Stir in the mashed bananas.
Add the flour mixture to the wet mixture and stir until just combined.
Pour the batter into the greased loaf pan and bake for 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean.
Let cool completely (about 15 minutes) before removing it from the pan and placing it on a wire rack.
The extra liquid from being frozen is one of the reasons the banana bread stays so moist. However, if you would like to use ripened bananas that haven't been frozen, you can add a few tablespoons of milk to the batter so that the batter isn't as thick.
