We love sweet bread in our home, especially moist banana bread made from frozen bananas. When I feel like baking on Sunday afternoons, this is my go-to quick bread recipe. It’s sweet, delicious, and super easy to make.

Since we always have an overabundance of bananas (we love them, but we can never seem to eat them up before they get too ripe), I will usually just throw them in the freezer (no peeling required). Then, when I need them for this simple moist banana bread, I pull them out and defrost them for a few minutes, peel them, and mash them.

Honestly, it is the perfect quick and easy snack (or make-ahead breakfast) that is simple enough for a beginner but also perfect if you are looking to try a new banana bread recipe (with frozen bananas) that’s super simple to make with pantry staples you already have on hand.

Helpful Tips for Making Banana Bread 

  • This recipe uses frozen bananas that have been thawed. This is my preferred way to make banana bread, as I always seem to have an overabundance of bananas that ripen too quickly. You don’t even have to peel the bananas. Just toss them in the freezer when they get brown, and then defrost them in the microwave when you need them. Be aware that they will be very mushy when you pull them out of the microwave but much easier to mix with your other ingredients.
  • When combining ingredients, try not to overmix as it will make your bread chewy and not as moist.
  • Since ovens can vary, it may take a little more (or less) time for your banana bread to be done. As a rule of thumb, I always start checking about 5 minutes before, just in case. A clean toothpick (or fork) will tell you when it’s done.
  • Store homemade banana bread in the refrigerator for up to a week or at room temperature in an airtight container for 3-4 days.

What You Will Need for This Simple Banana Bread Recipe

This moist banana bread only requires some basic ingredients you probably already have in your pantry or fridge, so it’s perfect when you need a last-minute snack or you are craving a healthier sweet treat.

  • light brown sugar
  • butter (melted)
  • eggs
  • vanilla
  • bananas- (that have been frozen and thawed)
  • all-purpose flour
  • baking soda
  • salt
  • cinnamon
  • optional- chocolate chips or walnuts.

Note: This recipe can also be made with fresh ripened bananas; however, since they won’t have the extra liquid from being frozen, you can add a few tablespoons of milk to your batter.

How to Make Homemade Banana Bread

  1. Preheat your oven to 350°, and then gather your ingredients.  Grease an 8×4-inch loaf pan.
  2. Combine the flour, baking soda, ground cinnamon, and salt in a medium bowl.
  3. In a large bowl, whisk together the melted butter, brown sugar, vanilla, and beaten eggs.
  4. Defrost your frozen bananas in the microwave, mash them, and add them to your wet ingredients. 
  5. Add the flour mixture to the wet mixture and mix until combined. Add any optional ingredients. (nuts or chocolate chips).
  6. Pour your batter into a greased loaf pan.
  7. Bake for 70 minutes or until a toothpick inserted comes out clean. (The loaf will also pull away from the sides of the loaf pan around the edges).
  8. Let cool before removing it from the pan and placing it on a wire rack.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ cup butter melted
  • cup brown sugar
  • 2 large eggs
  • tsp vanilla
  • 3 frozen bananas thawed and mashed

Instructions
 

  • Preheat the oven to 350°. Grease 8x4-inch loaf pan.
  • Combine the flour, salt, baking soda, and ground cinnamon in a medium bowl and set aside.
  • Mix the butter, sugar, vanilla, and beaten eggs together in a large bowl until combined. Stir in the mashed bananas.
  • Add the flour mixture to the wet mixture and stir until just combined.
  • Pour the batter into the greased loaf pan and bake for 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool completely (about 15 minutes) before removing it from the pan and placing it on a wire rack.

Notes

The extra liquid from being frozen is one of the reasons the banana bread stays so moist. However, if you would like to use ripened bananas that haven't been frozen, you can add a few tablespoons of milk to the batter so that the batter isn't as thick.
Store in an airtight container for 3-4 days or in the refrigerator for up to a week.
