Last year, we purchased a new Blackstone griddle, and although I couldn’t wait to try it out, I was also a little worried that I wouldn’t be able to find enough healthy recipes to make on it to justify the cost. Although I had a few tried and true recipes like hibachi I wasn’t sure what else I could make that wasn’t loaded with grease, and unhealthy foods.

However, after spending some time experimenting, I was happy to discover there are so many ways to make healthier options on the Blackstone. So, I thought I would share some of our favorite recipes if you are trying to eat healthy and still enjoy your Blackstone grill.

How Can I Make Griddle Cooking Healthier?

Healthy Breakfast Ideas to Make on the Blackstone

Breakfast is perfect to cook on a Blackstone griddle because everything can cook quickly all at once, which is a lifesaver when you are trying to feed a hungry family. Plus, you can control the ingredients so you can feel good about what you are feeding your family. Here are a few of our favorite healthy Blackstone griddle recipes to make for breakfast.

Veggie Breakfast Quesadillas

We love making quesadillas on the griddle and these veggie breakfast quesadillas are super easy and flavorful. Start by adding a little olive or avocado oil to your Blackstone and cook 1 bell pepper (diced), 1 onion (diced), 1 cup of mushrooms (sliced) until tender.

Then, add about 3 cups of fresh spinach chopped and cook until they have wilted. Scramble 8 eggs in a dish seasoned with salt, pepper, and garlic powder (optional), and mix with the veggies.

Place 8 whole wheat tortillas on the griddle, and add the cooked eggs and veggies, sprinkle some shredded cheddar cheese, fold and cook for another couple minutes until the outside of the tortilla shells are golden and crispy. Serve with salsa.

Veggie Breakfast Scramble

Want a lighter option for breakfast? Try this veggie breakfast scramble instead that is made exactly like the quesadilla recipe above but without the shells. Serve with whole-grain toast and fruit.

Breakfast Burritos with Veggies

Who can resist a breakfast burrito? They are quick, easy to make and portable making them perfect to take on the go. We use the same recipe for our breakfast scramble, quesadilla and these breakfast burritos. But, when making the burritos we simply add the flour tortillas to the Blackstone just until warm and flexible, remove them from the griddle, add the veggies and scrambled egg mixture, top with some cheddar (or low-fat cheese), roll up and serve with salsa.

Avocado Toast With Eggs

Avocado toast is one of my favorite breakfast options all year long but making it on the Blackstone makes it even better. Lightly brush some oil on your choice of bread ( I use whole-grain) and place it on the Blackstone over medium heat. Toast for a couple minutes each side until golden brown.

Slice or mash your avocado while your toast is cooking. Add in some salt and pepper and everything bagel seasoning. Spread on your toast. 

Now, it’s time to cook your eggs. You can scramble them as I do or fry them and keep your yolks runny, whatever you prefer will work. Once eggs are cooked, add to the top of your avocado toast and drizzle with a little hot sauce (if desired). 

Spinach and Feta Frittata

This frittata recipe is perfect for feeding a large family. Start by heating your Blackstone to medium-low, add some olive or avocado oil to your griddle and sauté half of a medium onion (diced) until soft, add 3 cups of chopped spinach and cook until it’s wilted. 

Scramble 8 eggs with a splash of milk and some salt and pepper. Spread the veggies evenly on the griddle and pour the eggs over the top of the veggies and sprinkle with feta cheese (about a half a cup or more if you love feta like I do).

Cover with a dome lid and cook for about 10 minutes or until the frittata is set. Remove from heat (it should firm up as it sits) and then slice and serve.

Veggie Omelet with Spinach and Mushrooms

Omelets are a great choice if you are cooking for 1-2 people. Of course, if you want to cook omelets for a large family, you can just double or triple this recipe. Add olive or avocado oil to your griddle and cook about a half a cup of sliced mushrooms until they are brown and soft. Add a handful of spinach and cook until wilted. 

Move the veggies to the side, and whisk 2-3 eggs until scrambled with salt and pepper. You may need to add a little more oil before adding the eggs so they don’t stick. Pour the eggs slowly on the grill, creating a circle. Let it cook a bit until the edges are set but the center is still a little soft. Add your mushrooms and spinach to one side with a sprinkle of parmesan cheese. Fold over and cook for a couple more minutes.

A few variations for these healthy Blackstone breakfast recipes

  • If you want higher protein for any of these healthy Blackstone breakfast ideas, you can add some cottage cheese or turkey sausage.
  • You can switch out the cheese and use part-skim mozzarella, reduced-fat cheddar or a sprinkle of parmesan cheese. Combining more cottage cheese and less regular cheese will also have fewer calories.
  • If you want to load up on veggies, try adding in some zucchini, green onions, and cherry tomatoes.

Healthy Lunch Recipes for the Blackstone

When it comes to healthy lunch recipes to make on the Blackstone, grilled chicken is one of my go-to proteins as it’s perfect for meal prep. You can grill a big batch of seasoned chicken to use throughout the week in wraps and salads. Here are a few variations of salads and wraps using grilled chicken that will make lunchtime stress-free.

How to cook grilled chicken on the Blackstone

Combine 2-3 pounds of chicken breasts or tenderloins (diced) with olive oil, salt, pepper, garlic powder, and onion powder. (your can also use your favorite griddle seasoning -we love smash seasoning). Then, cook on your griddle (medium heat) for 10 minutes or until the chicken is 165°F. If you are meal prepping for the week, let the chicken cool for 20 minutes or so and then store in an airtight container until you are ready to use it. It will be good in the fridge for 3-4 days.

How to cook grilled veggies on the Blackstone for lunch meal prep

Add your avocado or olive oil to the Blackstone with bell peppers and onions and cook for 3 minutes or so, then add your zucchini and mushrooms. Season with some salt, pepper, and garlic powder (or your favorite griddle seasoning). Cook for 10 minutes or until the veggies are tender-crisp. Try not to let them get too soft if you plan to meal prep as you will be reheating them. 

Chicken and Veggie Wraps

If you have prepped your chicken and veggies on the Blackstone, then all you need to do is to add your cold chicken and veggies from the fridge on the griddle until warmed (around 3 minutes), add some low-fat cheese or parmesan cheese on top. Warm your tortilla shells, add your chicken and veggies, then wrap up. Serve with light ranch dressing or low-fat dressing of your choice.

If you are cooking your chicken and veggie wrap fresh, cook your chicken first (instructions above), and then move to one side. Then, cook your peppers, onions, zucchini, and mushrooms. Add your cheese and then warm your tortilla shells and serve with your favorite sauce or dressing.

Grilled Chicken Caesar Wraps

In a bowl, toss together some romaine lettuce, parmesan cheese, and light Caesar dressing. Then, cook or reheat your chicken on your Blackstone. Add your tortilla shells to warm for about 20 seconds per side. Remove from heat, add your chicken and salad mixture, roll into wraps, and enjoy!

If you have already precooked your chicken on the Blackstone, then chicken Caesar salad couldn’t be any easier. Simply add your grilled chicken to a bowl with romaine lettuce, parmesan cheese, croutons, and drizzle with light Caesar dressing.

Greek Chicken Salad

Greek salad is my absolute favorite salad so I try to make this as much as I can especially during the summer months. To make this delicious salad, just combine a diced cucumber, lettuce, cherry tomatoes, some red onion sliced with some of the precooked grilled chicken and a sprinkle of feta cheese. Drizzle with a light Greek dressing or you can make your own homemade recipe.

BBQ Chicken Salad

Love BBQ chicken? Me too! This easy recipe is similar to the ones above, just add your cooked chicken back to the Blackstone with your favorite BBQ sauce. Cook for a 1-2 minutes until warmed. Then just add to a bowl with lettuce, red onions, corn, black beans, cherry tomatoes, a sprinkle of low-fat cheddar cheese, and a drizzle of light ranch dressing.

Buffalo Chicken Lettuce Wraps

These buffalo chicken lettuce wraps are perfect for an easy and flavorful lunch this summer. Cook or reheat your chicken on the Blackstone, add some buffalo sauce in the last minute of cooking/reheating. Add to lettuce leaves and top with ranch dressing. Super simple but so delicious. 

Optional ideas: You can also add in some shredded carrots, tomatoes, or some celery for some crunch.
