You will need:
- creamy peanut butter
- powdered sugar
- milk
- vanilla extract
- white chocolate chips
- holiday sprinkles
How to Make This Easy White Chocolate Peanut Butter Truffles
- In a medium bowl, mix together the peanut butter and vanilla extract until combined.
- Mix in the powdered sugar until a thick dough forms.
- Then, add milk a little at a time until it’s easy to shape into a ball.
- Roll the peanut butter mixture into 24 evenly shaped balls and place on baking sheet lined with parchment paper.
- Refrigerate for 30 minutes or until firm.
- Melt the white chocolate chips in the microwave in 20-30 second intervals stirring between each interval until smooth.
- Then, use a fork to dip each peanut butter ball into the melted white chocolate, making sure to let any excess drip off.
- Return them back to the parchment lined baking sheet, add your holiday sprinkles, and refrigerate until the chocolate has set.
Helpful Tips
- Make sure to use creamy peanut butter as it works best to roll into a ball. Unfortunately, natural peanut butter may not work for this recipe as it can make the mixture too oily or soft.
- Add your milk gradually, you want it to thin out the peanut butter mixture so it’s not crumbly and can be easily rolled into a ball.
- If the mixture becomes too soft, you can add a little more powdered sugar before rolling.
- When melting the white chocolate in the microwave make sure to melt slowly and stir every 20-30 seconds so it doesn’t overcook.
- If you find that the coating is too thick, you can add a small amount of coconut oil to thin it out.
- Add your sprinkles, decorations, drizzle before the chocolate hardens.
Variations
- Add a chocolate drizzle to your truffles instead of using holiday sprinkles.
- Use a milk chocolate coating in place of the white chocolate so it tastes similar to a peanut butter cup.
- Add a pinch of sea salt to the top for a salty and sweet combination.
Storage
- Store the truffles in an airtight container in the fridge for up to 7 days. If you want them to last longer, they can also be froze for up to 2 months.
