Honestly, when it comes to cooking outside this summer, our Blackstone griddle has completely replaced our grill. I love that it has such a large surface, so I can cook a lot of food at once without worrying about food falling through the grates. Plus, it’s super easy to clean, allowing me to make no-fuss family dinners quickly on busy days.

I’ve had so much fun trying out new Blackstone recipes and but also cooking some of our favorite quick and easy recipes on the griddle, which is how these Blackstone chicken quesadillas came to be.

These cheesy and veggie-packed chicken quesadillas are delicious, family-friendly, and so versatile that everyone in your family will enjoy them.

Ingredients for Chicken Quesadillas

These easy Blackstone chicken quesadillas are perfect for family meals on busy nights this summer. With only a few simple ingredients, these tasty chicken quesadillas are quick, frugal, and delicious. 

You will need:

  • Shredded chicken or leftover rotisserie chicken
  • Onion
  • Pepper
  • Mushrooms
  • Cheese (shredded)
  • Salsa
  • Tortilla shells

How to Make Chicken Quesadillas on the Blackstone

  1. Start by slicing your onion, pepper, and mushrooms.
  2. Preheat your Blackstone griddle to medium-low heat.
  3. Drizzle your avocado oil on the griddle surface and spread with a spatula to prevent sticking.
  4. Add your onions, pepper, and mushrooms to the griddle, stir, and let them cook for a couple of minutes.
  5. Then, using a squeeze bottle with water, squirt water over your veggies and cover with a dome lid to steam for 2 more minutes so they soften quicker.
  6. While the onions, peppers, and mushrooms are cooking, add the shredded chicken to a bowl and combine with the salsa.
  7. Uncover your onions, peppers, and mushrooms, then add your seasoned shredded chicken and let it cook for 5 minutes or until the veggies are tender and start to caramelize.
  8. Top with a cup of shredded cheddar cheese, then squirt water around the veggies and chicken, and cover with the dome cover to allow cheese to melt.
  9. Remove the cheesy chicken and veggie mixture from the heat and set aside.
  10. Divide the rest of the shredded cheese evenly among the tortilla shells, placing it on one side, and then top with your cheesy chicken and veggie mixture and fold in half.
  11. Add back to your Blackstone and cook each side for 1-2 minutes or until brown.
  12. Serve with more salsa (if desired) and sour cream.

Variations 

  • Switch out the veggies and cheese. Add in some more colored peppers, jalapenos for some extra spice, corn, or black beans. For the cheese, try Colby-Jack, Monterey-Jack, or pepper-Jack. (We have some picky eaters, so we keep things pretty simple.)
  • Use pre-cooked grilled chicken instead of shredded chicken.  You can also use rotisserie chicken if you have some on hand. If you have some extra time, you can also cook your chicken on the griddle alongside your veggies (sprinkle with taco seasoning instead of salsa).
  • Change seasonings- You can omit the salsa and season with your favorite seasonings instead.

Storage and Leftovers

  • Store any leftovers from the chicken quesadillas in the refrigerator up to 4 days in a covered airtight container.
  • To heat the leftovers, microwave for 1 minute or until warmed through, or reheat in a skillet or air fryer.

Ingredients
  

  • 1-2 tbsp avocado oil to coat the griddle
  • 2 cups shredded chicken
  • ½ cup salsa
  • 1 medium onion sliced
  • 1 medium green bell pepper sliced
  • 8 ounces mushrooms sliced
  • 2 cups cheddar cheese shredded
  • 8 inch flour tortilla shells 10 pack
