Ok, I will admit I’ve been a little bit obsessed with our Blackstone griddle this summer. If I’m not searching for new Blackstone recipes to try, then I’ve been modifying some of our favorite quick and easy recipes to make on it, including our go-to dinner, kielbasa with zucchini.
We make this tasty skillet dish all year long, as I’ve shared the recipe, where we serve it over buttered garlic parmesan noodles. As well as the modified recipe with onions and peppers. Honestly, it’s the perfect 20-minute recipe for busy weeknights because it’s such a hearty and versatile meal.
So, of course, I had to try making it on our outdoor griddle and decided to serve it with my Blackstone loaded potatoes, and the combination of the tender zucchini with the smoky kielbasa and cheesy potatoes was so delicious that I knew I had to share it with you.

Blackstone Kielbasa and Zucchini

Ingredients for Kielbasa and Zucchini
This no-fuss kielbasa and zucchini couldn’t be any easier with only 2 main ingredients, seasoned, making it the perfect quick, frugal, family-friendly summer dinner idea.
You will need:
- Beef or Polska Kielbasa
- Zucchini
- Avocado Oil
- Garlic Powder
- Salt and Pepper

How to Make Kielbasa and Zucchini on the Blackstone
- Start by slicing and quartering the zucchini and kielbasa.
- Preheat your Blackstone griddle to medium heat.
- Drizzle your avocado oil on the griddle surface and spread with a spatula to prevent sticking.
- Add your zucchini, season with salt, pepper, and garlic powder, stir, and let cook for a couple of minutes.
- Then, using a squeeze bottle with water, squirt water over your zucchini and cover with a dome lid to steam for 2 more minutes so they soften quicker.
- Uncover your zucchini, then add the sliced (and quartered) kielbasa and let it cook for 5 minutes more or until brown and caramelized.
- Serve with our loaded potato recipe, buttered garlic noodles, or rice.
Variations
- Replace the kielbasa. You can use chicken or turkey sausage to make the recipe healthier.
- Switch out the vegetables. Add in some onions, peppers, squash, or sliced potatoes for a complete meal.
- Add in some spice. Try adding in some red pepper flakes for some more spice.
Note: If you prefer your zucchini to be more tender-crisp instead of softened, then you can skip steaming them and just continue to stir and flip until they are cooked to your desired tenderness.
Storage and Leftovers
- Store any leftovers from the kielbasa and zucchini in the refrigerator for 3 days in a covered airtight container.
- To heat the leftovers, microwave for 2 minutes or until warmed through, or reheat over low heat on the griddle or in a skillet on the stove.

- 12 ounce kielbasa or smoked sausage sliced and quartered
- 3 medium zucchini sliced and quartered
- 2 tbsp avocado oil
- 1 tsp garlic powder
- salt and pepper to taste
Instructions
- Start by slicing and quartering the zucchini and kielbasa.
- Preheat your Blackstone griddle to medium heat.
- Drizzle your avocado oil on the griddle surface and spread with a spatula to prevent sticking.
- Add your zucchini, season with salt, pepper, and garlic powder, stir, and let cook for a couple of minutes.
- Then, using a squeeze bottle with water, squirt water over your zucchini and cover with a dome lid to steam them for 2-3 more minutes, stirring occasionally.
- Uncover the zucchini and add the sliced (and quartered) kielbasa, then let them cook together for 5 minutes or until brown and caramelized.
