Who can resist classic s’mores cooked over a campfire? It’s the perfect summertime treat that both kids and adults can’t seem to get enough of. But, combine it with rich brownies, a marshmallow creme topping, and you have fudgy s’mores brownies: the ultimate summer dessert that’s perfect for potlucks, picnics, or to enjoy as a sweet snack all season long.
How These Fudgy S’mores Brownies Came To Be
A few years ago, while on vacation, I tried a s’mores brownie for the first time, and it was love at first bite. So much so that I came back from our trip and attempted to recreate it. But, sadly, they didn’t turn out, or at least not how I remembered them to taste.
And, for some reason, I never tried again until I discovered on a recent trip that the restaurant is no longer serving the s’mores brownies on their menu. Which prompted me to try and recreate the thick, rich, and gooey s’mores brownies one more time.
So, taking what I learned from my last attempt, I chose to use marshmallow creme for the topping and a boxed brownie mix (to make it super easy!). Of course, you can use your favorite homemade brownie recipe instead, just add some extra chocolate chips to the brownie batter. I also decided to chill it in the refrigerator, and I’m happy to say it came out perfectly. So delicious, so chocolatey, and so gooey…just like I remembered.

Fudgy S’mores Brownies

Ingredients for Fudgy S’mores Brownies
These super-easy fudgy s’mores brownies use a boxed brownie mix for a delicious no-fuss s’mores dessert that only requires 6 simple ingredients, making them perfect for sharing at summer picnics, potlucks, parties, cozy fall get-togethers, or holiday gatherings with friends and family.
- graham crackers
- sugar
- butter (melted)
- brownie mix- we used the Betty Crocker Supreme Triple Chunk Brownies, but you can use whatever boxed brownie mix you would like, as long as it’s prepared as fudgy brownies and not cake brownies.
- marshmallow creme (Jet-Puffed)
- Hershey bars (snack size)

How to Make Fudgy S’mores Brownies
- Preheat your oven to 350°F.
- Make your graham cracker crust. Crush a sleeve of graham crackers (9) until they are crumbs and combine with your melted butter and sugar in a dish. Press into the bottom of an 8×8 baking dish.
- Prepare your brownie mix as directed on the box, then spread it over your graham cracker crust and bake according to the package.
- Add your marshmallow creme. Once your brownies are done, let them cool completely and then spread your marshmallow creme over the top. Sprinkle some graham cracker crumbs on top and add some Hershey bars (snack size).
- Set your broiler to high heat. Place your brownies under the broiler, making sure they are not too close to prevent burning. Broil for 1-2 minutes, watching closely just until the top has turned golden brown.
- Cool the s’mores brownies and then chill. Once brownies have cooled, place them in the refrigerator for 3-4 hours or overnight for optimal flavor.
Note: If your boxed brownie mix or homemade brownie recipe doesn’t contain chocolate chips, you can add 1 cup of chocolate chips to the brownie batter.
Also, once cooled, the brownies are ready to eat; however, after storing them in the refrigerator for a few hours, they tasted even better, which is why I recommend chilling them for 3-4 hours or overnight.
They can be stored in an airtight container for up to a week in the fridge.
