One of my oldest son’s favorite meals has always been Cheesy Ritz Chicken. It’s one of his tried and true favorite dinners. Luckily, it has very simple ingredients because I don’t even remember where I found the recipe, and I have searched for years to find it again with no success.
Regardless, we always served the Ritz chicken with egg noodles and a sauce that consisted of cream of chicken soup, sour cream, and butter. (not the healthiest, but so delicious and comforting.) Despite the simple ingredients, it can be a bit time-consuming to prepare, especially since everything is cooked separately.
So, a few weeks ago, when my son asked me to make it for dinner since it had been a while, I decided to turn it into an easy casserole with all the flavors of the original Ritz chicken. And, I’m happy to say that it was a huge success, getting two thumbs up from my son.
He actually said he preferred it to the original recipe, so I thought I would share it with you in case you are looking for a cozy chicken casserole dish to make on chilly evenings this spring. This Ritz Chicken Nooodle Casserole is made with chicken, egg noodles, cheddar cheese, and a creamy sauce with a buttery Ritz topping. It’s perfect for family dinners on busy weeknights.
