There is nothing more comforting than a hearty, warm casserole from the oven on a chilly night. Plus, they are so quick and easy to throw together when you are short on time. With a few simple ingredients, you have dinner on the table that the whole family is sure to love.

What are the main components of a casserole?

A casserole usually consists of some kind of protein, a starch such as pasta or rice. As well as cheese, sauce, and sometimes a vegetable. 

Many casseroles are made with condensed soup, but you can make them with homemade sauces if you prefer.

Can you use uncooked chicken in a casserole?

You can definitely use uncooked chicken in casseroles. Most of these recipes use cooked shredded chicken or rotisserie chicken because it’s easier and cuts down on the cooking time.

10 Hearty Chicken Casserole Recipes

1. Chicken Stuffing Casserole

This is our go-to casserole for busy weeknights and is at the top of our favorite meals list. My son requests it often for dinner.

Ingredients:

  • 3-4 cups of rotisserie or shredded chicken
  • 1 can of cream of chicken soup (10.75 oz) or cream of mushroom (we have tried both)
  • ½  cup milk
  • ½  cup sour cream
  • ¼  tsp garlic powder
  • ½  cup  shredded Colby jack or  mild cheddar cheese
  • 2 boxes of stuffing mix (12 oz)

Start out by preheating your oven to 350° F. Then, grease a 9×13 pan and prepare the stuffing as directed. Set the stuffing aside and combine the rotisserie chicken with the cream of chicken or mushroom soup, milk, sour cream, and garlic powder.

Spread into the pan and top with shredded cheese, add  stuffing to the top and bake for 20 minutes with foil on and then remove foil and cook for 10 more minutes (total 30 minutes) if you like the top to be a little crunchy (we do!) When it’s brown and bubbly remove from the oven and let cool.

Optional: If you want to cook this with boneless uncooked chicken, simply add the chicken to the pan first and then layer the cheese soup mixture and stuffing on top. Bake an additional 10-15 minutes until the chicken is cooked through.

Sides: We like to serve broccoli or baby carrots with this meal.

2. Cheesy Chicken Rice Casserole

This chicken casserole recipe is the perfect winter dinner without all the work. It’s not only tasty but quick and easy to prepare.

Ingredients:

  • 4 chicken breasts (boneless and uncooked) cut into chunks
  • 1 can of cream of chicken soup (10.75 oz)
  • 1 ½ cups of chicken broth
  • 1 cup of uncooked white long-grain rice
  • ½ of mild cheddar cheese (shredded)
  • 1 package of frozen broccoli
  • ½ teaspoon of Italian seasoning
  • ¼ teaspoon of garlic powder (optional)

Preheat oven to 375°, and cut the chicken into chunks and mix with soup, broth, vegetables, rice, and seasonings. Add to a greased baking pan. Top with shredded cheese, cover with foil, and bake for 45 minutes or until the casserole is brown and the chicken is cooked through. You can remove foil in the last 10 minutes if desired.

Sides: Italian bread and salad

3. Chicken Noodle Casserole

We like to use rotisserie chicken for this casserole but if you have an instant pot, you can cook your chicken and shred it or even bake or boil it before assembling the casserole.

Ingredients:

  • 3-4 cups of shredded chicken
  • 12 oz. bag of egg noodles
  • 1 can of cream of chicken soup (10.75 ounces)
  • 1 can of cream of mushroom soup (10.75 ounces)
  • 1 small can of mushrooms
  • 1 cup of sour cream
  • salt, pepper, garlic powder to taste
  • 1½ cup of Italian bread crumbs
  • ½ cup of butter

Preheat oven to 350° and grease the baking dish. While egg noodles are boiling, mix the soups, sour cream, chicken, mushrooms, and seasonings together. Melt butter in the microwave or on stove top and then combine with bread crumbs and set aside. Once egg noodles are cooked, add to soup mixture and top casserole with bread crumb mixture. Cover and bake for 30 minutes or until heated through.

Optional: You can sauté onions and fresh mushrooms (in place of canned) if you prefer.

Sides: Broccoli or mixed vegetables

4. Chicken Parmesan Casserole

We love chicken parmesan but don’t like all the work that it sometimes entails to put together. So, one night I decided to combine all our favorite chicken parmesan flavors in a casserole and it was a big hit with the family.

Ingredients:

  • 1 rotisserie chicken or 3-4 boneless skinless chicken breasts cooked and shredded
  • 16 oz box of penne pasta (or any kind you like)
  • 1 jar of your favorite marinara sauce
  • 8 oz bag of shredded mozzarella cheese
  • 1/3 cup of parmesan cheese
  • 1/2 tsp of Italian seasoning
  • salt and pepper to taste
  • garlic powder (optional)

Preheat your oven to 350°, and then boil pasta. While pasta is cooking shred your chicken. When the pasta is done, simply mix it with the shredded chicken, pasta sauce, and seasonings. Pour into a greased 9×13-inch baking dish, and top with mozzarella and parmesan cheese. Cover and bake for 30 minutes or until hot and bubbly.

Sides: Green beans or salad and garlic bread

5. Chicken Alfredo Casserole

Chicken alfredo is another favorite in our home. We make this dish exactly like our chicken parmesan casserole above except we switch out the marinara sauce with Alfredo sauce. I use jarred Alfredo sauce to keep it simple for busy nights but you can also make your own homemade sauce if you’d prefer.

Sides: Broccoli or peas

Chicken and Biscuit Casserole

I don’t know if there is anything more cozy or comforting than chicken and biscuits. When I discovered how easy this casserole is, it quickly became my new favorite way to serve this classic dish.

Ingredients:

  • 3-4 cups of cooked and shredded boneless chicken (or you can use a rotisserie chicken)
  • 1 can of cream of chicken soup (10.75 ounces)
  • 1 can of cream of celery soup (10.75 ounces)
  • 1 bag of frozen mixed vegetables
  • ½ cup of milk
  • 1 package of refrigerated biscuits
  • garlic powder and black pepper to taste (I’ve also used poultry seasoning)

Preheat oven to 400° and grease a 9×13 inch casserole dish. Cook vegetables per instructions on the package and then combine them with the chicken, soups, milk, and seasonings. Bake for 15 minutes and then add biscuits and bake another 15-20 minutes or until biscuits are cooked through and brown.

Sides: We like to serve this meal with a salad.

Chicken Tortilla Casserole

This is another quick recipe that uses shredded chicken.  It takes very little prep time and only uses a handful of pantry ingredients. 

Ingredients:

  • About 3 cups of shredded chicken 
  • 1 jar of salsa (we prefer medium)
  • 1 can of black beans (15 oz)
  • 1 can of corn
  • 1 packet of taco seasoning 
  • 1 cup of sour cream
  • 8 oz package of shredded cheddar cheese
  • 1 bag of tortilla chips (you can also use Doritos)

Preheat your oven to 350° and grease a 9×13-inch pan. Combine shredded chicken, salsa, taco seasoning, black beans, corn and sour cream. Place a layer of tortilla chips on the bottom of your casserole dish, add the chicken mixture, and sprinkle with half of the cheese. Add another layer of chips and chicken mixture and then layer with the rest of the shredded cheddar cheese. Bake for 30 minutes or until cheese is bubbly and casserole is cooked through.

Broccoli and Chicken Casserole

This cheesy casserole is not only delicious but satisfying. A comforting casserole your family will love.

Ingredients:

  • 3 cups of cooked shredded chicken
  • 1 can of cream of chicken soup (10.75 oz.)
  • ¼ cup of milk
  • ¼ cup of sour cream
  • 1 bag of frozen broccoli
  • ½ cup of cheddar cheese
  • garlic and/or onion powder to taste
  • 2 tablespoons of butter (melted)
  • ¼ cup of Italian-style bread crumbs

Preheat oven to 375° and grease the casserole dish (13×9). Combine the soup, milk, and sour cream in a bowl, add the chicken, broccoli, and shredded cheese, and pour into the dish. Mix the melted butter and bread crumbs together and sprinkle over the top. Bake for 30 minutes or until heated through.

Sides: You can serve this with pasta or rice

Cheesy Potatoes and Chicken Casserole

This recipe is filled with cheesy goodness. Although the recipe calls for frozen diced potatoes, you can peel and dice potatoes instead. However, it helps to boil them or microwave them to soften them before adding them to the casserole dish.

Ingredients:

  • 3-4 cups of cooked chicken or rotisserie (shredded)
  • 1 can of cream of chicken soup (10.75 ounces)
  • ½  cup sour cream
  • ½ cup milk
  • 1 package of frozen seasoned diced potatoes (thawed)
  • ¼ tsp of garlic powder 
  • 16 oz shredded cheddar cheese
  • salt and pepper to taste

Preheat the oven to 375° and grease a 13×9 inch baking dish. Add the potatoes to the bottom of the dish. Then, combine the chicken, sour cream, milk, soup, seasonings, and half the cheese and pour over the potatoes. Sprinkle the rest of the cheese over the top. Cover and bake for 40-45 min or until cooked through and cheese is melted.

Sides: Green beans or corn

 

Crunchy Chicken Casserole

This casserole recipe is full of flavor and simple to put together when you need something quick for dinner.

Ingredients:

  • 3-4 cups of shredded chicken 
  • 1 can of cream of chicken soup (10.75 oz)
  • 1 cup of sour cream
  • ½ cup of butter (melted)
  • 1-2 sleeves of butter-flavored crackers (crushed)
  • 1/2 tsp garlic powder
  • parsley

Preheat oven to 350° and grease the casserole dish (13×9). Combine the chicken, soup, sour cream, and garlic powder together and pour into the dish. Mix together crushed crackers and melted butter then sprinkle over the chicken mixture. Top with parsley and bake for 30 minutes or until golden brown.

Sides: Broccoli or green beans
