We are so close to spring now, and if you’ve read any of my most recent posts, you will know that I have been counting down the days. Yesterday, I saw my first robin, and my flowers are just starting to peek through the ground. Now, if the weather would cooperate, we would be all set.

Regardless, I’m still so happy that it’s finally on its way, which means busier (and fun) days are ahead. Calendars will start to fill with picnics, backyard BBQs, family gatherings, and potlucks. And with all those fun things on the horizon, you will need a go-to dessert that is quick and easy to make but also sure to impress.

So, with that in mind, I thought I would share my family’s favorite recipe for raspberry oatmeal bars. Most recipes I’ve tried in the past use only a small amount of crumb topping (and since the crumb topping is one of the best parts, I like to add a little more). 

These simple but delicious homemade raspberry bars are ideal when you want a no-fuss dessert to enjoy as an afternoon sweet treat or to share. I hope you enjoy them as much as we do.

Ingredients for Raspberry Oatmeal Bars

These raspberry oatmeal bars are made with simple pantry ingredients for a delicious raspberry-filled treat with a soft buttery topping. Perfect to enjoy for dessert or an afternoon snack.

You will need:

  • flour
  • rolled oats
  • brown sugar
  • baking soda
  • salt
  • butter
  • vanilla extract
  • raspberry preserves

How to Make Raspberry Oatmeal Bars

  1. Preheat your oven to 350°F and line an 8×8 baking dish with parchment paper for easy slicing and cleanup.
  2. Mix the flour, oats, brown sugar, baking soda, and salt in a large bowl.
  3. Add in the vanilla and melted butter until the dough gets crumbly.
  4. Press half of the mixture into the bottom of the pan.
  5. Spread the raspberry preserves evenly over the base, leaving about ¼ inch around the edge.
  6. Then, sprinkle the remaining crumb mixture over the top.
  7. Bake for 35 minutes or until the top is golden brown and the edges look done.
  8. Let it cool completely before slicing so that the raspberry center is set.

Variations:

  • Switch out the different flavors of jam, try strawberry, blueberry, or blackberry instead.
  • You can also mix in some different nuts, like pecans or almonds.
  • Drizzle with a frosting glaze or even melted white chocolate.

Helpful Tips:

  • Use parchment paper so it’s easier to remove the bars from the dish.
  • Press the base into the pan firmly, but don’t overpack so it doesn’t get as dense.
  • Warm the raspberry preserves in the microwave for 20 seconds so it’s easier to spread.
  • Keep in mind that the bar is done when the edges become golden brown (the center may still appear a little soft).
  • Allow enough time to cool so the raspberry center can set.

Storage:

  • Store your bars in an airtight container for up to 3 days. If they are stored in the refrigerator, they can last up to a week.
