As the weather has started to cool down and fall is upon us, I have started to get in the baking mood. Honestly, baking ranks up pretty high in my list of favorite things to do in the fall.
Apple desserts are some of the best sweet treats to enjoy when the weather starts to get chilly. And paired with a hot cup of apple cider, a cozy blanket, and a good book, it doesn’t get any better.
A few weeks ago while grocery shopping, I came across a sale on caramel chips. They are not something I usually buy (we are all about chocolate chips in our house), however, they were such a great price, and since I am all about saving money on my groceries I tossed them in my cart.

As excited as I was to try them in a recipe, it wasn’t until last week (over a month after I bought them) that I sat down and started thinking of ways that I could use them up. It actually came at a perfect time as the air started to get crisp in the mornings and apple baking was on my mind.
Since muffins are the preferred quick breakfast in our household, apple muffins were the first thing that came to mind. In fact, it’s muffins that my boys have chosen over the years for their birthday or the first day of school breakfasts.
Since my husband is all about apple anything especially apple crisp in the fall. I decided to combine them and add the caramel chips producing a delicious and comforting caramel apple treat. Let’s just say they didn’t last very long in my household as they were gobbled right up and I’ve already had requests to make another batch right away.

So, if you are ready to do a little fall baking, then how about giving these yummy caramel apple crisp muffins a try. They are loaded with chopped granny smith apples, caramel chips, with a cinnamon- brown sugar streusel crumb topping.
Caramel Apple Crisp Muffins
Let’s Begin!
Gather your ingredients and start by preheating your oven to 375 °F
I like to use Granny Smith Apples because they’re slightly tart which makes a nice balance when paired with the sugary sweetness of the muffin and crumb topping.
Peel and dice your apples so they are fairly small. This swivel peeler works great for peeling your apples.
Then, add the brown sugar to bring out the juice in the apples. Let that sit while you combine the dry ingredients. Melt your butter, and then add to the apples and sugar mixture.
Add in the rest of the wet ingredients and then combine with the dry ingredients. The batter will be a little thinner than cookie dough but not runny.
Then, add in your caramel chips and fill a muffin tin 2/3 of the way so that there is room for your crumb topping.
When making your crumb topping make sure to combine the brown sugar and flour really well so all the brown sugar is broken up. Add dry ingredients to cold butter otherwise, the topping will sink into the muffin instead of laying on top.
Spoon the batter into muffin tins lined with paper liners and bake at 375° for 18-20 minutes or until a toothpick comes out clean when inserted in the muffin.
*If you want to make this recipe healthier, omit the crumb topping, caramel chips, and use applesauce in place of the butter.

Caramel Apple Crisp Muffins
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup butter melted
- 1 cup brown sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 cups chopped apples granny smith
- 1 cup caramel chips
Crumb Topping
- ⅓ cup brown sugar
- 1 tablespoon all purpose flour
- ¼ cup quick oats
- ¼ teaspoon ground cinnamon
- 1 tablespoon butter
Instructions
- Preheat your oven to 375° F
- Grease (2) 6 or (1)12 cup muffin tin or line with liners
- Dice two granny smith apples into cubes, add brown sugar and set aside.
- In a medium bowl, combine flour, baking powder, baking soda, salt and cinnamon and set aside.
- In a larger bowl, Combine the (melted) butter, eggs, and vanilla. Add the apple mixture and mix until smooth. Then, add in the dry ingredients and caramel chips.
- In a small bowl, mix together brown sugar, flour, oats, and cinnamon. Then, cut in butter until topping is crumbly. Sprinkle over muffins.
- Fill muffin tins about 2/3 of the way full and top with crumb mixture.
- Bake at 375° for 18-20 minutes or until golden brown and a toothpick inserted in center comes out clean. Allow to cool for 3-5 minutes. Makes 12 muffins
How to Freeze Muffins?
Muffins are the ideal quick breakfast to grab on the go. Since they are quick to throw together and bake, you can make up a large batch to freeze to enjoy throughout the week.
Once you have baked your muffins and let them cool, you can wrap them individually in plastic wrap and then toss them in a ziplock freezer bag.
When you are ready to enjoy, just take one out of the freezer bag, unwrap from the plastic wrap (I like to wrap in a paper towel and reheat in the microwave for about 30 seconds or so.
