Banana bread is the ultimate comfort food so it’s no surprise that when winter rolls around, it’s my go-to quick bread to make. The best part of this flavorful bread is that there always seems to be overripe bananas hanging around just waiting to be used up.

While there is nothing like a good classic banana bread recipe, it’s sometimes fun to change things up. This is exactly what happened last week when I decided to use up the brown, ripe bananas on our counter that had been taunting me for days. 

As I was grabbing the ingredients out of the fridge, I noticed some blueberries that also needed to be used up, and then I decided to take it to the next level of deliciousness by adding a cinnamon sugar crumb topping. Which is how this tasty sweet bread came to be.

Of course, you can customize this quick bread any way that you want. Don’t like blueberries? Try chocolate chips. Prefer it with no crumb topping? You can also build on your ingredients by adding other flavors and fruits you like. 

Here are a few things to keep in mind when making your blueberry banana bread:

 Helpful tips to achieve the best blueberry banana bread

  • Coat your blueberries in flour so they don’t sink to the bottom of your batter. If you don’t have fresh berries, frozen should work just make sure you still coat them in flour.
  • Always use really ripe bananas. They are easier to mash and sweeter too!
  • Don’t overmix your batter as it can cause your banana bread to come out too chewy and not moist like you want it to be.
  • Make sure to allow your banana bread to sit for at least 15 minutes before removing it from your loaf pan.

Can You Freeze Blueberry Banana Bread?

Yes, it’s so easy to freeze. Simply wrap it tightly in plastic wrap and put it into a ziplock freezer bag. It will last for about 3 months in your freezer before it should be used up.

Just make sure that your blueberry banana bread is completely cooled.

How to Thaw Frozen Blueberry Banana Bread?

When you are ready to use your blueberry banana bread, remove it from the freezer, take it out of the freezer bag, and unwrap. Place on a plate and let it thaw out at room temperature.

Start by gathering all your ingredients and then preheat your oven to 350° F. This would also be a good time to grease your loaf pan so you don’t forget.

In a large bowl, mix together your butter and sugar. Once it’s creamy, add in your eggs, vanilla, and mashed bananas. Combine the dry ingredients in a smaller mixing bowl and then add to your wet ingredients.

Remember not to overmix, as it will make your blueberry banana bread too dense. Then, gently fold in your flour-coated blueberries.

Lastly, pour into your greased loaf pan. Sprinkle your crumb topping over your batter and add some extra blueberries on top. Bake for 1 hour and 15 minutes but start checking after an hour as ovens vary. 

It’s done when a toothpick inserted in the center comes out clean. Let cool for 15 minutes before removing it from the pan to a wire rack. Slice and enjoy!

Ingredients
  

  • cup brown sugar
  • ½ cup butter softened
  • 2 eggs large
  • 3 bananas mashed
  • ½ cup milk
  • teaspoon vanilla
  • cups all-purpose flour +1-2 tablespoons to coat blueberries
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 cup blueberries plus a few for the top

Crumb Topping

  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 1 tablespoon butter
  • cup all-purpose flour

Instructions
 

  • Preheat oven to 350° F. Spray your loaf pan with cooking spray.
  • In a large mixing bowl, combine sugar and butter with mixer or by hand until creamy.
  • Add eggs, mashed bananas and vanilla. Then, beat until well blended.
  • Combine the flour, salt, cinnamon and baking soda in a smaller bowl and then add to the wet ingredients.
  • Toss blueberries in flour until coated, then gently fold into the batter.
  • Pour batter into an 8½ x 4½ inch loaf pan.
  • To make crumb topping, combine butter, sugar, cinnamon and flour in a bowl. Mix until it forms a crumb topping. Sprinkle desired amount over the batter and top with additional blueberries.
  • Bake for 1 hour and 15 minutes or until center comes out clean when inserted with a wooden toothpick.
  • Cool for 10-15 minutes and then remove from pan. Let cool completely on a wire rack.

Notes

  • Since oven temperatures vary, you can start checking your blueberry banana bread at 1 hour 5 minutes.
  • We prefer a lighter crumb topping, however the recipe makes quite a bit so you are able to adjust it to your preference.
