Lately, I’ve really been missing our dinners on the Blackstone, since it went into winter storage. Needless to say, I’ve been counting down the days until spring so I can finally use it again because I love cooking on it so much.

So, to get me through, I’ve been cooking some of our favorite Blackstone griddle recipes indoors, like the Blackstone Teriyaki Beef Stir Fry that I shared last summer, which had become one of our go-to dinners all summer. Along with chicken hibachi (that I will be sure to share once the weather warms up) and Blackstone Kielbasa and Zucchini Recipe.

However, this time I decided to swap out the beef for chicken in the teriyaki stir-fry, and it came out so delicious. Plus, it was super easy to throw together with just a bag of frozen stir-fry veggies, a bag of frozen precooked grilled chicken strips, and some teriyaki sauce served over white rice. It’s the ultimate shortcut meal when you need dinner on the table fast.

Shortcut Chicken Teriyaki Stir Fry

Ingredients for Chicken Teriyaki Stir Fry

This shortcut chicken teriyaki stir-fry is perfect for a busy weeknight dinner as it’s easy to make with minimal ingredients and prep. No complicated steps, just a quick and delicious meal your whole family will enjoy.

You will need:

  • frozen precooked grilled chicken strips
  • frozen stir-fry vegetables
  • Sweet Baby Ray’s Teriyaki Sauce (or your favorite teriyaki sauce; homemade or store-bought)
  • white rice
  • avocado oil

How to Make Teriyaki Chicken Stir Fry

  1. Cook your rice according to package instructions.
  2. Heat your oil in a skillet over medium-high heat, then add your frozen pre-cooked grilled chicken strips and cook, stirring occasionally, until heated through and browned.
  3. Once the chicken is warmed, add your frozen stir-fry veggies, and cook for 5-10 minutes until veggies are tender.
  4. Add your teriyaki sauce, stir well, and simmer for 5 minutes until everything is coated and the sauce begins to thicken. 
  5. Serve over the white rice and enjoy!

Variations:

  • Swap out the frozen veggies with any veggies you would like. Prefer onions and peppers? Add those with the chicken instead.
  • You can use rotisserie chicken in place of the grilled chicken. Or, use leftover pork or steak. 
  • Stir in some canned pineapple chunks during the last few minutes of cooking if you want to add some sweetness.
  • Add some red pepper flakes or sriracha sauce for some spice.
  • Serve over noodles or ramen instead of the rice.
  • If you want a healthier version of this recipe, use brown rice or Jasmine rice. You can use less sauce with a little water to lighten it up. Also, if you have your own homemade version, you can use that instead. 

Storage 

  • Store your leftovers in an airtight container in the fridge for 3-4 days. To reheat- microwave or heat in a skillet over medium heat.

  • 1 bag precooked frozen grilled chicken strips 16-22 ounces
  • 1 bag frozen stir-fry vegetables 20 ounces
  • ½ bottle Sweet Baby Ray's Teriyaki Sauce
  • 3 cups white rice
  • 1 tablespoon oil canola or avocado

Instructions
 

  • Prepare white rice according to package directions.
  • Heat oil in skillet over medium-high heat.
  • Cook the grilled chicken, stirring occasionally, until heated through and lightly browned.
  • Add in the frozen stir-fry veggies and cook for 5-6 minutes or until veggies are tender.
  • Reduce heat to medium, then add the teriyaki sauce. Stir well and simmer for 3-5 minutes until everything is coated.
  • Serve over white rice and enjoy!
