How to Make Strawberry-Stuffed French Toast

  1. In a bowl, mix the softened cream cheese, strawberries (that have been thawed and chopped), with the sugar and vanilla until it is creamy and smooth. (taste to make sure it’s sweet enough for your liking, add a little more sugar if not) Then, set aside.
  2. In a shallow bowl, whisk together the eggs, milk, flour, sugar, cinnamon, and vanilla until combined.
  3. Spread a layer of the strawberry cream cheese mixture on one slice of the Texas toast and then top with another slice of bread to make a sandwich.
  4. Heat a lightly greased skillet over medium heat, then dip the stuffed sandwich into the egg mixture. (Make sure both sides are coated, but don’t soak too long.)
  5. Cook for about 3 minutes on each side or until golden brown and heated through.
  6. Add some extra strawberries on top with some whipped cream and enjoy!

Variations:

  • Swap out the fruit filling. You can replace the strawberries with thawed frozen blueberries, or raspberries, or have a combination of all three for a mixed berry French toast.
  • Mash your strawberries. If you want a more creamy texture without the chunks of strawberries, you can mash your strawberries.

Helpful Tips:

  • Drain your strawberries to avoid making your filling too soggy.
  • Use softened cream cheese for easier spreading.
  • Chill your filling for 10-15 minutes or make-ahead so it’s thicker and won’t leak out of the bread when dipping into the egg mixture.
  • Try not to oversoak your bread when dipping it into your egg mixture, as it helps the French toast stay crispy.
  • Make sure to cook on a medium-low heat and keep checking so the outside doesn’t burn as the inside is warming.

Storage

  • Store your leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over low heat.
