If you are anything like me, you always have a box of brownie mix in the cupboard for those times when you want a sweet treat or an after-dinner dessert. They are quick to make and so delicious, especially if you are a chocolate lover like we are.

Brownies are my oldest son’s favorite dessert, and we have them often, so I’m always looking for different ways to make them. Whether it’s making homemade brownies, topping them with a peanut butter frosting, or making our favorite s’more brownies.  

Last week, I thought it would be fun to combine my son’s love of brownies with one of my favorite desserts, chocolate mousse, to create an easy and indulgent dessert recipe that got two thumbs up from everyone in my family. So, I thought I would share it with you in case you need a make-ahead dessert that looks impressive but requires very little effort.

Made with a simple box of brownie mix (you can also make homemade brownies if you prefer), and layered with a light chocolate mousse that’s rich but still light and fluffy. Add in a sprinkle of crushed Oreos for the perfect balance of creaminess and crunch.

Chocolate Mousse Brownie Bar Recipe

Ingredients for Chocolate Mousse Brownie Bars

These chocolate mousse brownie bars consist of a simple baked brownie mix, topped with a layer of Cool Whip and chocolate mousse, then sprinkled with crushed Oreos for an easy, no-fuss dessert that is perfect for parties, potlucks, or when you are craving an indulgent chocolatey treat.

You will need:

  • Brownie mix + ingredients on box
  • Instant chocolate pudding mix
  • Milk
  • Cool Whip
  • Oreos (crushed)

Brownie Bars with Chocolate Mousse

How to Make Chocolate Mousse Brownie Dessert Bars

  1. Prepare your boxed brownie mix according to the package instructions, then spread into a 9×13 pan and bake as directed. Let cool completely.
  2. Meanwhile, prepare your pudding mix according to the directions on the box. 
  3. Add half of the Cool Whip until smooth and fluffy. (Optional: Save a couple of teaspoons of the chocolate pudding for the chocolate whipped topping if desired, so it’s extra chocolatey)
  4. Once the pan of brownies has cooled, spread the chocolate mousse evenly over the top and chill in the fridge for 20 minutes.
  5.  Add the extra pudding you set aside to the remaining Cool Whip to make a lighter chocolate whipped topping, and then sprinkle with crushed Oreos. 
  6. Chill 2-4 hours in the fridge before serving.

Variations:

  • You can change this dessert up by using cookies & cream pudding, then mix the crushed Oreos into the layers.
  • Add peanut butter to the brownie batter before baking, then add chopped peanut butter cups on top instead of the Oreos.
  • Try drizzling caramel sauce over the brownie layer before adding the mousse.

Helpful Tips:

  • Make sure the brownies cool completely before putting on your mousse, as it will melt.
  • Chill the mousse layer for 15-20 minutes before adding your chocolate Cool Whip topping.
  • When spreading your top Cool Whip layer, go slow to spread evenly. 
  • Adding the extra pudding to the top layer of Cool Whip is optional. We do it to make it extra chocolatey, but you can just omit that step if you want and use the regular Cool Whip on top.

Storage:

  • Store your bars in an airtight container for up to 3 days. You can also freeze it for up to 1 month. Thaw overnight in the fridge before serving. (Keep in mind that the mousse will be firmer after freezing but still delicious.)
