Cookies are the ultimate sweet treat and are perfect for snacking any time of the year. I know they are my absolute favorite dessert. Over the years, I have shared our go-to soft and chewy chocolate chip cookies, as well as our chocolate peanut butter chip cookie recipe and, most recently, our double peanut butter chocolate chip cookies.

As you can probably tell, we are obsessed with cookies, especially when they combine our love of peanut butter and chocolate. But, as much as I love that delicious flavor combination, there are times when I just want that sweet and salty peanut butter flavor.

So, I decided to make the ultimate peanut butter cookie, combining my favorite candy, Reese’s Pieces, with creamy peanut butter and peanut butter chips (adapted from my double peanut butter chocolate chip cookies) to create the most indulgent triple peanut butter cookie. These soft and chewy cookies are super easy to make with no chilling required. Plus, they are perfect for any occasion, including birthdays, holidays, or if you want a delicious and irresistible peanut buttery sweet and salty snack any day of the week.

Helpful tips to achieve the most delicious and soft cookie

  •  Preheat your oven. Don’t skip preheating, as it ensures that your cookies come out perfectly every time.
  • Ensure butter is at room temperature. You can do this by taking it out earlier in the day or popping it in the microwave for 10-20 seconds. Be sure not to melt the butter, otherwise, it will cause the cookies to become flat as they will spread too much while baking. 
  • Avoid undermixing the butter and sugar mixture. Make sure to stir the wet ingredients until the batter is smooth and creamy.
  • Don’t overmix the dry ingredients. Unlike the wet ingredients, avoid overmixing as it may prevent your cookies from spreading at all. Mix the dough until it’s just combined. 
  • For best results, bake one sheet of cookies at a time. This is to ensure the cookies are baked evenly.
  • Avoid placing your cookie dough on a warm baking sheet. This can also cause spreading, which will result in thinner, flatter cookies.

Ingredients for Reese’s Pieces Peanut Butter Cookies

To make these easy and soft peanut butter cookies, you will need the following ingredients:

  • butter- room temperature
  • light brown sugar
  • eggs
  • creamy peanut butter- this recipe was tested with JIF, but any peanut butter will work.
  • vanilla extract
  • all-purpose flour
  • baking powder
  • salt
  • Peanut butter chips
  • Reese’s Pieces candies- You can use the mini Reese’s Pieces in the baking aisle or the regular size in the candy aisle will work for this recipe.

How to Make Easy Reese’s Pieces Peanut Butter Cookies

  1. Start by preheating your oven to 350°.  Gather your ingredients and then line your cookie sheets with parchment paper. You can also use a silicone baking mat to clean up quickly and easily.  
  2. In a large mixing bowl, combine the softened (room temperature) butter with the brown sugar, vanilla, eggs (one at a time), and peanut butter by hand or with a mixer until creamy and smooth (2-3 minutes)
  3. Add in the dry ingredients (flour, baking powder, and salt) and stir until just combined. Do not overmix. Then, add in the peanut butter chips and Reese’s pieces.
  4. Using a cookie scooper, drop the cookie dough 2 inches apart onto a prepared cookie sheet. Bake for 10-12 minutes.
  5. Cool for 2 minutes before moving the cookies from the cookie sheet to a wire baking rack.

Easy Reese's Pieces Peanut Butter Cookies

A soft and chewy cookie that's packed with Reese's Pieces, peanut butter chips, and creamy peanut butter flavor for the ultimate peanut butter sweet treat.

Ingredients
  

  • ½ cup butter room temperature
  • 1 cup brown sugar light
  • ½ cup peanut butter creamy
  • 2 eggs large
  • tsp vanilla extract
  • cups flour all-purpose
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup Reese's Pieces candy
  • 1 cup peanut butter chips

Instructions
 

  • Preheat the oven to 350° F, then line a cookie sheets with parchment paper.
  • Combine the butter and the light brown sugar in a large mixing bowl.
  • Add the vanilla, 2 eggs, and peanut butter to the bowl. Mix until smooth and creamy.
  • Combine flour, baking powder, and the salt in a small bowl. Once combined, add to the wet ingredients. Do not overmix the batter.
  • Stir in the Reese's Pieces and peanut butter chips.
  • Then, using a 1½ inch cookie scoop, drop the cookie dough onto an ungreased cookie sheet about 2 inches apart.
  • Place in preheated 350° oven, 10-12 minutes.
  • Cool the cookies for 2 minutes before moving them to a wire rack.

Notes

To store cookies: Keep cookies in an airtight container for up to 7 days. If you notice that your cookies are starting to harden, add a slice of fresh bread to the container to soften the cookies.  
They will last in the freezer for 3-4 months.
