As a busy mom, I know how crazy weeknights can be with juggling work, after-school activities, carpooling, and appointments. There is nothing more stressful after a long day than coming home and realizing that you have to make dinner even though you have absolutely no idea what to make.
When my boys were younger, I started searching out quick and easy dinner ideas to make when I wanted to get dinner on the table fast. They didn’t need to be fancy and take hours to cook. I wanted dinner recipes that were kid-friendly, frugal, and simple to prepare.
So, I started compiling recipes and created some tried and true recipes that I knew I could turn to when I needed a fast dinner (especially since we were trying to save money and eating out wasn’t an option on those busy nights).
I started sharing my 10-minute and 20-minute meals hoping they would help you when you needed a quick dinner idea. The goal was to provide delicious family-friendly recipes with minimal prep and simple ingredients to help make your life easier.
Recently, while meal planning and updating my list of favorite meals, I found some easy 15-minute dinner recipes that I haven’t shared yet and decided with summer fast approaching this would be the perfect time since the end of the school activities can get crazy busy this time of year.

These easy 15-minute dinner ideas are perfect for busy nights when you don’t know what to make. The best part of these super fast dinners is that they use ingredients you probably already have in your pantry or fridge.

Chicken Recipes
Chicken Alfredo Pasta with Broccoli
We love making chicken alfredo pasta in our home especially when we add rotisserie chicken. Rotisserie chicken is the perfect time-saving hack when you need to get dinner on the table quickly on those busy nights.
To make this chicken alfredo pasta with broccoli, simply boil 16 ounces of linguine pasta according to the directions on the box. Meanwhile, microwave a package of frozen broccoli.
Once the pasta and broccoli are cooked, and the pasta has been drained, combine them along with some shredded rotisserie chicken and a jar of your favorite alfredo sauce (you can also make homemade alfredo sauce if you prefer).
Season with salt, pepper, garlic powder, and a few sprinkles of parmesan cheese for a quick and simple weeknight meal that takes less than 15 minutes to make.

Burrito Bowls
Burrito bowls are our go-to on taco nights because of how simple they are to throw together and everyone loves them because they are so customizable.
To make a burrito bowl, you can use ground beef or shredded rotisserie chicken to save time as the protein. Add some microwavable pouches of rice, or make some instant rice for your grain.
Then, just add your toppings, such as corn, black beans, tomatoes, shredded cheddar cheese, avocado slices, lettuce, onions, and salsa. An easy and delicious meal that’s perfect for Taco Tuesday.
Chicken Taco Rice Skillet
To make this tasty chicken taco rice skillet, you start by browning a pound of ground beef in a skillet. Once the ground beef is cooked, add a packet of taco seasoning and cook according to the directions on the package.
While the ground beef is cooking, cook 3 cups of instant rice. Add a cup of salsa to the rice once it’s cooked through. Combine with the ground beef mixture and then sprinkle with a cup of shredded cheddar cheese.
Cover and simmer for about 5 minutes or until the cheese has melted. You can also add in some corn or black beans if you would like to make this dish even more delicious.

Pasta Dishes
Rigatoni and Meatballs
This recipe is perfect for busy weeknights. When it comes to family dinners, pasta is highly requested in my home so I’m always on the lookout for meals that can be made up super quick and are delicious.
To make rigatoni and meatballs, boil rigatoni pasta according to the directions on the box. Combine a half package of frozen Italian-style meatballs with your favorite jarred sauce. Cook for about 10 minutes or until meatballs are cooked through.
Combine with the rigatoni, and season with salt, pepper, garlic powder, and Italian seasonings. Sprinkle with mozzarella cheese and parmesan cheese, cover, and let simmer for about 4-5 minutes or until cheese has melted. Serve with a side salad or vegetables and Italian bread.
Butter Garlic Noodles With Parmesan
I have been making this garlic parmesan pasta for years. The best part is that it’s so customizable. You could add shredded chicken and some vegetables if you would like. It could be an easy side dish or a complete meal.

Skillet Lasagna
Skillet lasagna is a quick and easy dinner when you are craving traditional baked lasagna but don’t have the time to make it. To make skillet lasagna, simply boil egg noodles according to the directions on the package (usually 7-8 minutes).
While pasta is boiling, brown 1lb. of ground beef in a skillet. Once the noodles are cooked add, the ground beef, your favorite pasta sauce, a 16-ounce container of cottage cheese (you can use ricotta if you prefer it), an 8-ounce package of shredded mozzarella cheese (save some to sprinkle on the top), and ½ cup of parmesan cheese.
Add some garlic powder, salt and pepper, and Italian seasonings, and stir to combine. Sprinkle the mozzarella cheese you saved out over the top. Cover and simmer for about 5 minutes or until the cheese is melted. Serve with Italian bread and a side salad.

Pizza Recipes
Pepperoni Flatbread Pizza
Pepperoni flatbread pizza is a delicious, kid-friendly meal that is super easy to put together. All you need is some flatbread crusts, some pizza sauce, mozzarella cheese, and pepperoni. Then, just bake at 425° for about 12 minutes or until cheese is melted and the crust is brown. Serve with a salad and you have a tasty family-friendly meal in 15 minutes.
Pizza Quesadillas
We love quesadillas in our home and pizza is probably our most favorite quick and easy dinner so we found an easy way to combine the two to make the perfect less than 15-minute recipe.
To make pizza quesadillas, grab two tortilla shells, spread some pizza sauce (not too much or the sauce will leak out) over one of the tortilla shells, add some mozzarella cheese and some pepperoni, and add a little bit more cheese if you are using pepperoni to make sure the shells stick to together as they cook.
Cover with the other tortilla shell and brown in a greased skillet for a couple of minutes or until brown on each side. Enjoy!

More Easy 15-Minute Dinners
BBQ Glazed Boneless Pork Chops
This recipe is as easy as browning your pork chops in a skillet with some olive oil for a couple of minutes on each side until brown.
Then, baste with your favorite BBQ sauce on both sides and cook for another 5 minutes on each side or until they reach a temperature of 145°.
